Heaps Pickled Sour

This one sounds a bit rogue… pickled apple in a gin sour??
Yeah we thought the same.

But it works. Like, really works.

You get that zingy pickle hit up front, then citrus, a bit of sweetness, and that lemon myrtle tying it all together. It’s sharp, fresh and kinda addictive.

 

Heaps Pickled Sour Recipe

You'll need:

  • 60ml Heaps Good Gin
  • 6 slices pickled apple
  • Bar spoon of pickle juice
  • 30ml fresh lemon juice
  • 20ml sugar syrup (we used thyme infused)
  • 1 lemon myrtle leaf (roughly torn)
  • 4 drops Wonderfoam (or egg white/aquafaba)
  • Ice

How to make it:

  • Chuck the pickled apple + a spoon of pickle juice into a shaker and muddle it up.
  • Add everything else.
  • Ice in.
  • Shake hard till cold and foamy.
  • Strain into your favourite glass.
  • Garnish with more pickled apple + lemon myrtle.

 

Why It Works

It’s all about balance - salty/sour from the pickle, citrus from the gin and lemon, sweetness from the syrup, then that lemon myrtle doing its thing over the top.

Sounds weird. Tastes great.
