Victor Harbor Gin is the first release in our Spirit of SA Series: a range dedicated to showcasing the places, produce and flavours that make South Australia special.

Inspired by the rugged coastline of Victor Harbor, this gin captures the savoury, windswept character of the region. Native thyme and coastal daisy bush (botanicals found along the local shoreline) bring an aromatic, herbaceous depth that feels unmistakably coastal.

Capers add a subtle warmth and length across the palate, giving this gin structure and a gentle savoury edge. Bright South Australian lemon and orange lift the profile with fresh citrus vibrancy, while a classic juniper backbone keeps everything grounded in traditional gin territory.

Flavour Profile

Victor Harbor Gin draws inspiration from the Mediterranean climate of South Australia’s Fleurieu Peninsula. It’s a suuuper flavoursome Mediterranean style gin, which leaves a lingering oily mouthfeel and is incredibly smooth (none of that “ginny burn” with this one!).

It is often described as “beachy” which is what we were going with by showcasing coastal daisy bush in the blend – “it smells and tastes like the beach!” is a very common description at tastings!
