'The Hills' Gin is the second release in our Spirit of SA Series, where we feature the best of South Australian places and produce.

This one celebrates the rolling strawberry farms of the Adelaide Hills, a region that we are lucky enough to call home since settling in to our Hahndorf tasting room.

Made with Mount Barker strawberries, The Hills Gin is a lighter, delicate style that captures the fresh, vibrant character of the region. The strawberries bring a soft natural sweetness and its signature blush pink hue.

Like all our South Aussie gin releases, it carries that smooth, easy-drinking mouthfeel we’re known for!
Flavour profile

Fresh from the rolling Adelaide Hills of South Australia, this pink gin is packed with real strawberry flavour. We start with a classic juniper backbone and layer in native strawberry gum, tangy muntries, a twist of fresh lemon, and a generous dose of Mt Barker strawberries, both distilled and macerated post-distillation for that juicy pink hue and fruit-forward profile.

Botanicals like cinnamon myrtle, coriander seed, and Orris root round things out with a subtle spice and earthy depth, while native ingredients add a distinctly local twist.

It’s bright, juicy, and effortlessly drinkable - just as good in a G&T as it is in a spritz or sour.
